Mutton Biryani Recipe

Key Ingredients:

Basmati rice (2 cups), Bay leaves (2-3), Black cardamom (1 tbspn), Black cumin seeds ( tbsn), Black peppercorn, Green cardamom, Cinnamon sticks, Cloves, Fennel, Jaiphal, Javitri, and salt.

Mutton (cut in 2 inches pieces) Garam masala, Garlic paste, Ginger paste, Raw papaya paste, Hung curd (almost 1 cup), Lemon juiced (1-2 lemon), Coriander powder, Cumin powder, Red chilli powder, Salt (as per the taste), Onions (2-3 medium sized), Tomatoes (1-2), Milk (warm), Ghee, Saffron strands, Oil, Rose water, Kewra essence, 4 green chillies

Steps to make mutton biryani:

1. First of all to make Mutton Biryani, clean and wash mutton in running water and pat dry it with a clean towel. Now start marinating the mutton; add the beaten curd, ginger-garlic paste, raw papaya paste, chilli powder, salt, lemon juice and garam masala in chicken and marinate it for some time till the spices get dissolved into the chicken. Allow the mutton to marinate for 2-3 hours.

2. Now cut two medium sized onions thinly and separate the slices. Take a shallow pan or kadai and add oil into it, fry the onion till the color changes to light brown. Fry them in small batches so that they don’t burn.

3. Let’s start with the process of cooking the mutton, heat ghee in a thick-bottomed pan. Add sliced onions (2-3 medium size) and green chillies. Keep stirring continuously till the color of onions changes to light golden brown. It’s the time to pour in the ginger and garlic paste into it. It’s time to add the main ingredient, marinated mutton in it and cook on high heat for seven to eight minutes.

4. Pour in all the spices including coriander powder, cumin powder and red chilli powder and mix evenly so that it gives a nice flavor and color.

5. Add approximately three cups of water and bring it to a boil, now turn the flame to medium and cook covered till mutton is almost cooked.

6. Once the mutton is cooked, add tomatoes, salt, garam masala powder and fresh coriander leaves into it. Again keep the flame on medium heat and cook for another 10-15 minutes with stirring the mixture occasionally. Once it is cooked completely, the ghee would be separated from the spices and there will be no watery gravy in the meat.

You have now completed the process of cooking mutton; next step is to prepare another important part of this mouth watery dish which is Rice. Follow the simple steps to prepare the rice.

Steps to make it:

  • Use long size Basmati rice in making the biryani; soak the rice for about 20 minutes in water. After that wash them well in the running water for 2-3 times, drain the water afterwards.
  • In a small piece of cloth mix cardamom, cinnamon, cloves, javitri, jaiphal, black peppercorn, shahi jeera, star anise and tie then together.
  • Boil 750 ml of water to boil; add rice, bay leaf, salt and the mixture which you kept in a cloth into the water. Half cook the rice and off the burner when they are almost 80% cooked. Drain the water and remove the masala potli from it.
  • Now for the saffron-milk, take 1/4th cup of warm milk and mix saffron strands in the milk. Cover the pan and cook for some time, after that add rose water and kewra essence in the milk. Mix well and cover to use it later.

Now you are done with the preparation of mutton, rice and saffron milk mixture; the next last but very important step is layering the biryani which plays a crucial role in the overall taste of the dish. Adhere to the following steps to give perfect layers to your biryani.

Layering the biryani

  • Take a large heavy bottom pan which has a tight fitting lid with it; add two tbsp ghee into the pan. Turn and rotate the so the ghee can get coated on the bottom as well on the sides of the pan.
  • Starting from the bottom, add a layer of cooked rice at first, then add cooked meat pieces, sprinkle saffron water, add fried onion slices and ghee into it.
  • Now again add a layer of rice, then meat followed the same way mentioned in step 2. Remember to add rice on the top and bottom layer in the biryani.
  • Garnish with chopped pudina and coriander leaves, fried onion and green chillies to add color to it.
  • Now it’s time to cover the pan to let all the herbs and spices mix together. Seal the pan with flour dough or aluminium foil, turn the heat to low flame and allow it to cook for 40 minutes.
  • After 40 minutes switch off the burner and let the biryani cool for another 5- 10 minutes before transferring it to a shallow bowl.
  • You are done; serve with raita and salad to increase the taste.

Notes

  • You can also add raw papaya paste to make it more tempting.
  • Spices including mutmeg and mace are optional and you can also increase or decrease the quantity of other spices as per your taste.
  • If possible, place a tawa below the fan to avoid biryani from getting burned.
  • Use desi ghee instead of oil to add fragrance to your biryani.
